Update: I have finally graduated from Loma Linda University with my Masters in Nutrition and Dietetics. I passed my boards and I am a Registered Dietitian. I moved back to Charleston, SC briefly while I was studying and working. Then, I decided I wanted to live on a boat again. I was boat hunting for a long time trying to find the perfect layout for a reasonable price. We finally found a boat and it was located near St. Augustine FL. Since I hadn’t ever been to St. Augustine before I had no idea what a cute town it was when I arrived. It reminds me of a smaller Charleston, SC. There was a winery, chocolate factory, and distillery with in a few blocks of each other. You can’t go wrong with all of those places. We thought maybe we should stay awhile here. The boat needed some work done to it so we were living “on the hard,” as we call it. That means we were living on land in the boat. Since there really wasn’t much power we were limited on cooking and pretty much everything.
I would like to consider myself a “southern girl with an international twist.” I was born and raised in Charleston, South Carolina. Currently I am getting my Masters in Nutrition and Dietetics in California. I used to think I want to be a Chocolatier, so many of my dessert posts with include dark chocolate. In addition, most of my recipes will be for people who are gluten-free/wheat free. I don’t tolerate wheat very well!
Since I have lived by the water most of my life, I love seafood. I prefer if fresh and local. Where I come from “friends don’t let friends eat imported shrimp!” So there will be dishes that have a coastal flare!
Since I have been blessed with the opportunity to travel the world and its cuisine I have come to the conclusion that I love food, I mean all types of food. I do not discriminate against any food group nor any country’s food. I love living in a country where it is possible to “travel” to Ethiopia for lunch and India for dinner. I think that to be able to really experience a country you must experience their food.
My food will be from a mixture of countries. One dish might have influences from Lebanon, Mexico, and Vietnam. I get inspiration from food and I hope you will be inspired to make some of my mouth-watering creations!
