Low-fat Kale Dip

This is a really easy recipe.  I made it in less than 15 mins!    I have been eating from a bag of kale for the past week and this is what I made from what was left.  It is a healthy alternative to many of the dips out there too.  If you made your own tortilla chips from tortillas then you could cut down on the sodium.

kale_editedFirst, I sautéed about 3 cups of kale and added 1/2 a cube of garlic.  Trader Joe’s has frozen garlic that you can pop out individual cubes.  I used to buy the jumbo tub of garlic from Costco but they lose flavor so you have to use a lot of it.  With the cubes, the flavor is similar to using fresh garlic that you just cut.  You also save your hands from smelling like garlic for the rest of the day too!  In this recipe, I usually use fresh lemon juice but all the lemons on my new tree aren’t doing very well so I went with lemon pepper.

Kale Dip


3 cups Kale chopped

1 16 oz container of low-fat cottage cheese

1/2 cube garlic

2 teaspoon lemon pepper

1/2 teaspoon red pepper flakes

dash of chopped onion


1. Sauté the kale with the garlic, till it has cooked down some.  

2. Put all the ingredients in the blender and mix till creamy

3. Test to see if it needs more spices to your taste
